SENSORY PROFILE

A good quality decaffeinated coffee with a pleasant sweetness and length in the cup. There are sweet notes of hazelnut , roasted almonds and cane sugar . It has a pronounced acidity and a light body. A sweet aftertaste.

This coffee is grown in southern Mexico, in the Motozintla terroir, at an altitude of 1,200 meters. The region has a temperate climate, with mild temperatures in winter and warmer in summer. It is a decaffeinated mountain water coffee that is decaffeinated naturally with water and without using any chemical or solvent process, which guarantees a pleasant sweetness in the cup. It is a process that preserves all the aromatic molecules and the total quality of their flavors.

THE FARM

The Santa Fé farm is located in the Motozintla region, in southern Mexico, at an altitude of 1,200 meters. It enjoys a temperate climate with minimum temperatures of 18 ° C in winter and maximum temperatures of 27 ° C in summer. It is a farm steeped in history, founded in 1855 by a Mexican family. It used to be part of the Guatemalan zone, until Chiapas became a Mexican in 1824.

THE STORY OF THE PRODUCER

After working for many years in the banking sector, Jorge Arreola Nava decided to embark on his coffee adventure in 2009. He started as an exporter. Today He runs the Santa Fé farm, managing not only its administrative tasks, but also the production and supervision of organic farming methods.
